This Spiced Apricot Highball uses apricot and chai tea to create a delicate yet delicious syrup that marries beautifully with the butterscotch notes in Chivas XV. Simply add this sweet syrup to Scotch and soda for a refreshingly easy cocktail recipe.

40 ml
Chivas XV
100 ml
Apricot & Chai Tea
40 ml
Soda Water
Orange Wedge, to garnish

PRO TIP

While stirring the Scotch and soda together mixes the drink, make sure to not overmix the highball as this can cause it to lose its fizz

FLAVOUR UP

To make the apricot and chai tea, boil 500ml water with 215g of chopped fresh apricots and 5g chai tea and infuse for 2 minutes, stirring occasionally

SWEETEN

Strain off the ingredients, add 20g sugar and stir until dissolved

POUR

Add Chivas XV and cooled apricot and chai tea into a highball glass and fill to the top with ice

STIR

Add soda water and give small stir to blend ingredients

REFINE

Add another cube of ice if needed to make sure the ice is tight and compact

SERVE

Garnish with orange wedge and serve
